Lazy Cook Meatball and Veggie Soup
Posted by Happy on March 10th, 2010What encourages and inspires us more than a tasty, nutritious meal at the end of the day? I cooked for my ability to know! But recently, my neighbor has a pot of "Sopa de Albondigas' () known as the Mexican Meatball Soup, and I was passionately in love with her! I had a recipe, especially because it is something that is in the freezer for" Rainy Day! "He told me to my own, what I like and leave what does not appeal to me. So I spent a half day –including the purchase – that's my version of what I call "Lazy Cook Meatball Veggie Soup. Since nothing encourages me more than when something delightful first settled for the night to write!
Preparation and cook time (if you have all the ingredients at home) is located about 35 minutes. Flavor of this soup is fresh and simple, and burgers are very moist and soft, because portions of soup and pan-browned first. If the cold to do,,Coverage and cooling to 3 days. Serves only to re-boil. Fa 12-16 cups depending on how many you add the vegetables. (E 'a great way to get the vegetables!)
Slice the vegetables as follows:
4 stalks celery
2 Anaheim peppers (long, green, not hot) or chopped 1 bell pepper
1 large white onion
4 large red potatoes (white with red skin potatoes) for large pieces: about 6 potatoes (the potatoes stick together!)
6 carrots, cut into thin (or, if youare lazy cook like me, a bag of fresh carrots)
½ bag of coleslaw, or you can slice ½ green cabbage, if you are lazy, I
½ bunch of cilantro (also Italian parsley) Makes 1-1 ½ cups total
2 slices of Italian cut squash
Fill a large pot with 12 cups water, add beef broth (about 5 tablespoons or lumps taste 6)
You can add a tomato, cut into large cubes or even stewed tomato juice
Add3-5 cloves garlic, crushed
Add 1 large onion to the pot.
Cup chopped peppers.
Add 1 cup of chopped coriander already
Salt and pepper to taste
) Heat on the pot (high and bring to a boil.
During the wait for cooking, prepare the meatballs.
1-1 ½ kg fillet of land, or hamburger, or Turkey, or a combination
2 eggs beaten
In white rice ½
½ cup of the remainingCoriander
Worcestershire sauce
Salt and pepper
Set 2 "meatballs extended hands (meatballs)
When the liquid boils, drop in meatballs one by one, not even move. Cook, MD of heat for 20 minutes, covered.
Add the vegetables and simmer for 10-15 minutes (I like crisp vegetables!) Make sure that everything should be covered with liquid.
Take a large frying pan and shovel in large soup plates. Yummy, Yummy, Yummy!
Heat for 3 days or frozenmonth. Great tasting and good for lazy cooks like me!
